Significantly reduce your proofing time with this handy kitchen accessory. It comes complete with a temperature adjustment dial with a temperature range from about 70-105F to help you get the perfect proof every time.

The mat measures 21in by 10in providing you with plenty of space for your bread dough and/or sourdough starter.

What Is Proofing?
Proofing is a stage in bread making when the yeast/sourdough (wild yeast) in your dough activates. The yeast in the bread consumes the carbohydrates and releases carbon dioxide. This carbon dioxide makes the bread dough expand and rise.

Why Does this Proofing Mat Speed Up the Proofing Process?
Proofing is dependent on the external environment (like temperature and humidity).
When the temperature is cold… the yeast in your bread dough slowwww downnnn. I can't say I blame them, this happens to me too. The chemical reactions happen much more slowly at cold temperatures. In contrast, it rises more quickly when it is warm. Caution- If it gets too warm, your yeast will die. That's where we come in…

How To Use:
Use this proofing mat to encourage your dough to rise. You can use this mat for either/both the bulk proof or final proof. We recommend proofing your dough in a covered bowl/banneton, rather than directly on the proofing mat. Adjust the temperature of your proofing mat through the controller according to your needs.

The warmth from the mat encourages your dough to proof more quickly. The ideal proofing temperature for your dough is typically around 75F-85F. This is about the middle of the dial on our proofing mat. Note: the temperature of your dough will vary slightly based on the ambient temperature of your room. The temperature range shown in the graphic is based on a room kept at 72F.

Another use for this proofing mat is for your Sourdough Starter. Place your sourdough starter on the proofing mat set on low/medium to encourage quicker fermentation.
