1 1/4 C. Organic Sunrise Golden Lite Flour or Sunrise Golden Lite Pastry Flour
1 t. baking powder
3 1/2 T sugar
1 1/2 t baking soda
1/2 t salt
1 C. Sunrise organic cornmeal
2 C buttermilk
3 T unsalted butter, melted
3 eggs, separated
Blueberries - fresh are best but frozen may be used if well-drained.
Sift together dry ingredients. Mix together buttermilk, egg yolks, and melted butter. Make a well and whisk into dry ingredients just until all are moist. In a separate clean, dry bowl beat egg whites until stiff. Fold into batter.
Lightly grease cast iron skillet or griddle and allow it to become hot - until water sprinkled on it sizzles. Add batter to the size preferred. Dot with blueberries. Turn only once and don't press down.
Serve with butter and warm syrup.
Makes about 12 cakes. Recipe can be divided.
