100% whole wheat can be used without combining with other flours (e.g. white) because it is milled fresh to order.  Freshly milled flour is the key to making whole wheat products that are not bitter or heavy.  Keep in the freezer if it is not going to be used within a couple of weeks.  When ready to use bring to room temperature.

Hard Red Spring Wheat - for bread and other yeast products.

Soft White Winter Wheat - for pastries and other non-yeast products.  Can be used as is or sifted for a whiter product.  Save sifted particles as an addition to cereals, soups, etc.

Rye - Use in combination with other flours for bread with a higher crumb, or alone for a flatter bread, crackers, etc.

Durum - this is a coarse product.  Can be used whoe for making coarse pasta, or sift for semolina and finer pasta.  Use sifted particles as an addition to cereals, soups, etc.  Also makes a wonderful polenta.
