2 C wheat berries = 4 C cooked
7 C cold water
1/2 t salt (optional)
Wash and sort through berries. Place berries and water in pan and bring to a boil. Reduce heat, simmering 1-2 hours. Watch to see that the water isn't completely absorbed before they're finished. You may need to add more water. Drain and cool. This softens the berries for use in salads, stews, soups, etc. for a nutty flavor and chewy texture. Refrigerate two days or freeze.
Berries may be soaked for several hours before cooking. They will absorb a lot of water and will need less for cooking. Cooking time will be 15-20 minutes.
