Ingredients
- 1/3 cup Butter, softened
- 1/2 cup sugar, minimally processed, if possible
- 2 eggs
- 1 3/4 cup Sunrise Flour Mill Heritage Whole Wheat Pastry Flour, sifted
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 2 tsp Vanilla
- 1 cup (or more) Mashed Ripe Bananas.*
- 1/2 cup chocolate chips
- 1/2 cup chopped pecans, or nuts of your choice
- *I had 3 bananas and these muffins are very moist. Bananas as an addition don’t need to be limited to the number in a recipe. Our chef/baker/instructor friend often uses more than called for.
Instructions
- Heat oven to 350F.
- Line a medium muffin tin with papers or grease well.
- Cream together butter and sugar.
- Add eggs and mix well.
- Add flour, baking powder, baking soda, salt, and vanilla and mix well after each addition.
- Mix in mashed bananas.
- Stir in chocolate chips and nuts.
- Drop batter into muffin cups so they fill them almost to the top.
- Bake for 30-40 minutes or until a toothpick inserted comes out clean
- Cool, if you can wait that long!

Today I made a double batch of the banana, chocolate chip and pecan muffins. I ate one still warm from the oven. It was delicious, flavorful and not too sweet. Perfect!
