Banana Chocolate Chip Pecan Muffins


  • 1/3 cup Butter, softened
  • 1/2 cup sugar, minimally processed, if possible
  • 2 eggs
  • 1 3/4 cup Sunrise Flour Mill Heritage Whole Wheat Pastry Flour, sifted
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 tsp Vanilla
  • 1 cup (or more) Mashed Ripe Bananas.*
  • 1/2 cup chocolate chips
  • 1/2 cup chopped pecans, or nuts of your choice
  • *I had 3 bananas and these muffins are very moist.  Bananas as an addition don’t need to be limited to the number in a recipe. Our chef/baker/instructor friend often uses more than called for.


  • Heat oven to 350F.
  • Line a medium muffin tin with papers or grease well.
  • Cream together butter and sugar.
  • Add eggs and mix well.
  • Add flour, baking powder, baking soda, salt, and vanilla and mix well after each addition.
  • Mix in mashed bananas.
  • Stir in chocolate chips and nuts.
  • Drop batter into muffin cups so they fill them almost to the top.
  • Bake for 30-40 minutes or until a toothpick inserted comes out clean
  • Cool, if you can wait that long!
