Cornbread

Ingredients

Optional Ingredients

  • 1/4 C Sourdough Starter
  • 3/4 C Apples, diced
  • Chilies, to taste

Instructions

  • Heat oven to 350 F for at least 30 minutes.
  • Stir cornmeal and flour together.
  • Mix in baking powder, salt and sugar.
  • Stir in beaten egg and milk.
  • Add butter, mixing well.
  • Mix in apples or chilies.
  • (If adding sourdough starter, do so now. Cover and refrigerate 7 hours or overnight).
  • Place in a greased  8" or 9” pan. Bake at 350 degrees, 25 minutes or when it's brown and a toothpick inserted comes out clean. Watch to see that it doesn’t overbake.
  • Cool and cut into squares.

When ready to bake if using sourdough starter

  • Heat oven to 350 F for at least 30 minutes.
  • Remove mixture from the refrigerator and allow it to warm enough to mix in additions.
  • Mix in apples or chilies and pour into an 8″ or 9″ square greased baking dish.
  • Bake at 350 degrees, 25 minutes or when it's brown and a toothpick inserted comes out clean. Watch to see that it doesn’t overbake.
  • Cool and cut into squares.
