An excellent recipe for whole wheat banana bread

1/3  C butter 

½  C sugar

2 eggs

1 ¾ cups Sunrise Flour Mill freshly milled TR Heritage Whole Wheat Flour (can also use Bolted or Refined, or a combination)

1 t baking powder

½ t baking soda

½ t salt

1-2 t vanilla

1 C mashed ripe banana.  This isn’t an exact measure.  Very ripe bananas and/or a little more than a cup makes moister bread.
Cream butter and sugar together.

Add eggs and beat well.

Stir dry ingredients together and add to creamed mixture alternately with banana. Blend well.

Stir in optional ingredients if desidered.  These could include:
½ C chopped walnuts
1/4 C shredded coconut
1/2 C chocolate chips

Pour into well greased loaf pans – l large, 2 medium, or 4 small.

 Bake at 350°F for about 45 minutes.  Toothpick inserted in center should come out clean.

Remove from pan and let cool on rack.
