I have a wood-fired oven in my kitchen and have been making pizzas for years. I’ve explored a number of artisan flours for crusts, and this is the best I’ve found. At 900 degrees, you need to reduce water to 60% baker’s ratio. Also, a long, slow proof with less yeast to start with produces better flavor. Thank you Sunrise!!!!

Love this flour!! This is the pizza flour and I bought it thinking it would be a little lighter than the bread flour but it is not. It is however still as excellent as the bread flour and gives a more dense bread. It is so hearty and filling. Love it! My son who has been gluten-free for years can now eat bread again with absolutely no adverse effects. I never used to be a bread baker but have taken it up and have not made a bad loaf yet! We primarily use it for neapolitan style pizza, with an 8 hour development time, but I actually used it for cinnamon rolls the other day and loved how they turned out!
