The resulting bread had a nice hint of rye flavor, and the complexity of taste that I wanted, but didn’t really feel any heavier than my usual whole-wheat bread. So, in other words, you don’t have to use this to make only pumpernickel (though I’ll try that too, one day).

Arrived quickly and well packaged. The product is wonderful esp when mixed with other flours. I blend it with Sonoran and bread flour. (200 g sonoran whole grain, 200 grams pumpernickle, 150 gr organic bread flour, 50 gr organic flaxmeal, 14 gr barley malt flour…all @ 80% total hydration) results…yummy, and light.
