Heritage Wheat Berry Salad

Our wheat berries are single-sourced directly from our community of farmers. And they care about responsible sourcing just as much as we do. Because they are organic, heritage grain, and tested for our quality standards; our wheat berries are often much easier to digest. Use them in recipes that are savory or sweet. We love a hearty side salad in the summer, loaded with colorful, locally-grown vegetables and dressed with a tangy vinaigrette.

I just made this. I know I should let the dressing absorb into the wheat berries and vegetables, but it looked so good that I had to try it right away. I bought a new bottle of balsamic vinegar tonight, then my grocery bag tore open on my back step and the vinegar bottle broke. I didn’t have a 1/2 cup in my old bottle, so I made up the difference with red wine vinegar. Still tasty! I don’t like cilantro, so I added a little Italian seasoning. I’d add a pic, but I don’t see an option to do that.
