Lasagna Soup

This is a tasty lasagna soup perfect for any time of year!
Ingredients

1 tablespoon olive oil

1 pound Italian sausage (Beef or Turkey also work)

1 small onion, diced

4 cloves garlic, minced

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil
-
½ teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

1 (28-ounce) can crushed tomatoes

4 cups chicken or vegetable broth

8 ounces lasagna noodles, broken into pieces

1 cup ricotta cheese
-
½ cup shredded mozzarella

¼ cup grated Parmesan cheese

Fresh basil or parsley, for serving (optional)

Directions
Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up as it cooks.
Add onion and cook until softened, about 3–4 minutes. Stir in garlic and tomato paste and cook for 1 minute.
Add oregano, basil, red pepper flakes, salt, and pepper. Pour in crushed tomatoes and broth. Bring to a simmer.
Add lasagna noodles and cook, stirring occasionally, until noodles are tender, about 10–12 minutes.
In a small bowl, combine ricotta, mozzarella, and Parmesan. Season lightly with salt and pepper.
Serve soup hot with a spoonful of the cheese mixture on top and garnish with fresh herbs if desired.
