Heritage Variety
Turkey Red Wheat
An heirloom hard red winter wheat brought to the Great Plains by Mennonite immigrants in the 1870s. Its deep roots and tall canopy made it the variety that survived the Dust Bowl — while modern dwarf wheat failed, Turkey Red endured.
Our Turkey Red is certified organic, grown on our Colorado and Washington farms, and stone-milled fresh.
About
Resilient by nature
Grows 4–5 feet tall with broad leaf canopies that shade out weeds. Deep roots prevent erosion and require far less input than modern dwarf wheat.
Flavor
Rich, nutty & complex
Full-bodied with warm nuttiness and earthy depth. Many bakers notice a difference on the first bite — you can taste the terroir.
Ideas for Use
Breads, pasta & pastry
Excellent for rustic sourdough, sandwich loaves, pasta, and pizza. Blends well with our sifted flour for muffins, pancakes, and pie crust.
