We were in search of something a little different to help use up some bananas and came up with this recipe: Banana Chocolate Chip Pecan Muffins. Trust me, these did NOT disappoint. In fact, these muffins are so delicious, it would be sinful not to share the recipe
Ingredients

1/3 cup Butter, softened

1/2 cup sugar, minimally processed, if possible

2 eggs

1 3/4 cup Sunrise Flour Mill Heritage Whole Wheat Pastry Flour, sifted

1 tsp Baking Powder

1/2 tsp Baking Soda

1/2 tsp Salt

2 tsp Vanilla

1 cup (or more) Mashed Ripe Bananas.*

1/2 cup chocolate chips
-
1/2 cup chopped pecans, or nuts of your choice
Directions
Heat oven to 350F.
Line a medium muffin tin with papers or grease well.
Cream together butter and sugar.
Add eggs and mix well.
Add flour, baking powder, baking soda, salt, and vanilla and mix well after each addition.
Mix in mashed bananas.
Stir in chocolate chips and nuts.
Drop batter into muffin cups so they fill them almost to the top.
Bake for 30-40 minutes or until a toothpick inserted comes out clean
Cool, if you can wait that long!
