Heritage Hamburger Buns

Ingredients

3 1/2 cups (420g) Heritage Bread Blend

3/4 (170g) water, lukewarm

2 tablespoons (28g) butter, at room temperature

1 egg

1/4 cup (50g) granulated sugar

1 1/4 teaspoons salt

1 tablespoon (9g) instant yeast

3 tablespoons (43g) butter, melted; divided

Directions
In a large bowl or your stand mixing bowl, mix and knead all of the ingredients to make a soft, smooth dough.
Cover the dough and let it rise until it's nearly doubled in size, about 1 to 2 hours depending on your environment.
To shape the buns: Turn the dough out on a lightly floured counter and divide it into eight pieces
In the palm of your hand, flatten each dough ball until it's about 3" across.
Place the buns on a lightly greased or parchment-lined baking sheet. Cover and let rest until they have nearly doubled in size, about an hour.
Nearing the end of the rising time, preheat the oven to 375°F for about 15-18 minutes
Brush the tops of the buns with half of the melted butter.
Bake for 15 to 18 minutes, until golden and internal temp is 195-205. If they are browning too fast, make a tent with aluminum foil and cover.
Remove them from the oven and brush with the remaining melted butter.
Cool the buns on a rack before slicing. Enjoy!
