Milled in a proprietary Unifine high-velocity impact milling system, producing a super-fine, highly nutritious, 100% whole grain, single source flour. Unlike traditional whole wheat flour, this super-fine grind creates loftier baked goods with greater volume than would be expected from a traditional whole wheat flour.

Well, started with 5 pound bag, moved up to 10 pounds and just bought 25 pound bags of white and wheat. More economical if you are a bread lover. Also going to try out the pancake mix. I love the heritage blend for plain white bread and light wheat bread. Great in every way. Easier to digest than commercial brand flour, works great with my no knead bread preferences, and freezes quite well, worth every penny. Better than a piece of cake. Be sure to not waste any stale bread and process those to use in place of store crumbs. So much better.

I love your flours, and cereals. I learned about your mill during the pandemic lockdown when I could not purchase good bread, flour or yeast at my local grocery store. Due to the pandemic, many folks were taking up baking. My son was baking Sourdough in Austin, TX. and using a local mill that sold Heritage Grain products near his home. I was inspired and I made one quick google search and found you, a local mill here in Minnesota providing organic Heritage Wheat flours and products. I was delighted to find and support a local mill! I have been baking bread since High School, but never had tried making bread with flour, salt and water only. I made a sourdough starter following online instructions and tips and my sourdough baking adventure began.My starter is 7 months old now 🙂I started the weekly baking of Sourdough for my family back in the spring. I have used the discard and your flours to make most of our family’s bread, buns, rolls, crackers, and my family has enjoyed the great flavors of home baked breads. I love the fresh flour, great flavor, and knowledge that all of the grain’s goodness is used. Nothing removed, all the nutrients in the flour. Since summer, every slice of bread, pizza crust, cake, pie crust, and cookie has been made with some or all of your flours.
Your customer services have not been needed because shopping online with your website is quick and it is easy to find the products needed. I was worried about shipping but should not have been. Your sturdy packaging protects flour when packages are bumped/ dropped en route, no leaks!

I have been using the same 5-loaf white bread recipe for 25 years. I have always been partial to 100% white bread and my husband is partial to more dense breads such as whole wheat bread. Occasionally, I do vary the ratio of white flour to whole wheat flour and other various flours/grains, such as oatmeal and wild rice (up to 50%) to keep my hubby happy. When I got this bag of heritage (organic! yay!) whole wheat flour I decided to set all caution aside and use only it for the first batch of bread, versus using partial white flour, too. There were several things that I noticed. Firstly, I was not surprised that the loaves collapsed somewhat while baking. They were more rectangular shaped than domed, more rustic looking. Whole wheat flour does that so I was not too disappointed, especially since a smaller slice of whole wheat bread is more substantial than a larger portion of white bread. Secondly, I was pleasantly surprised with the fine texture and softness of the bread. Thirdly, and most exciting, is the fact that there was NO bitterness or bad aftertaste. I realized that the bitterness of most whole wheat breads is what I don’t like! This bread is so mellow yet hearty tasting. I just love it! Even though this flour is more expensive than some grocery stores we are so happy to support a small, local flour mill. I am looking forward to our ritual peanut butter toast for breakfast. Thanks for the wonderful flour!

I LOVE this flour! The lower gluten makes the breads a little crumblier. But, I tweeked my recipes by adding a little more liquid starter and that seemed to make a difference. The flavor is hearty and something I really like. Bread is sometimes a blank canvas with little taste of its own, not so with this flour. It’s a little rich for my pocketbook, but I’d cook with it every day if I could afford to.

The taste is milder than your typical grocery store hard red wheat, but has no lack of the wheaty fragrance you’d be expect. The flour is very light and easy to mix with water (thanks, Unifine process). The dough is also pleasantly elastic. As far as loft in the crumb, I wouldn’t say I noticed dramatically more rise than other whole wheat flours in my pantry, but it rose well enough, and this may improve as I tweak my recipes.
The first thing I did is make my typical lazy, high-hydration, no-knead loaf, and it got eaten up promptly. I’d call this a success.
Last but not least, the bag I got was ridiculously fresh — milled about a week before arrival.

This is very, very fine flour. It seemed almost too fine for bread, but I used for pumpkin muffins which were only supposed to be half and half, using 100% whole wheat Unifine flour. They rose beautifully, just like all-purpose flour.

The taste is milder than your typical grocery store hard red wheat, but has no lack of the wheaty fragrance you’d be expect. The flour is very light and easy to mix with water (thanks, Unifine process). The dough is also pleasantly elastic. As far as loft in the crumb, I wouldn’t say I noticed dramatically more rise than other whole wheat flours in my pantry, but it rose well enough, and this may improve as I tweak my recipes.
The first thing I did is make my typical lazy, high-hydration, no-knead loaf, and it got eaten up promptly. I’d call this a success.
Last but not least, the bag I got was ridiculously fresh — milled about a week before arrival.

this is my other favorite flour mixed with the white in my no knead 18hrs fermented recipe …I do half and half and its sooo good ..much more rustic flavor which we really like especially dipped in organic olive oil with seasonings sliced to freeze and thaws fresh so yum.

I LOVE this flour! The lower gluten makes the breads a little crumblier. But, I tweeked my recipes by adding a little more liquid starter and that seemed to make a difference. The flavor is hearty and something I really like. Bread is sometimes a blank canvas with little taste of its own, not so with this flour. It’s a little rich for my pocketbook, but I’d cook with it every day if I could afford to.

I have been using the same 5-loaf white bread recipe for 25 years. I have always been partial to 100% white bread and my husband is partial to more dense breads such as whole wheat bread. Occasionally, I do vary the ratio of white flour to whole wheat flour and other various flours/grains, such as oatmeal and wild rice (up to 50%) to keep my hubby happy. When I got this bag of heritage (organic! yay!) whole wheat flour I decided to set all caution aside and use only it for the first batch of bread, versus using partial white flour, too. There were several things that I noticed. Firstly, I was not surprised that the loaves collapsed somewhat while baking. They were more rectangular shaped than domed, more rustic looking. Whole wheat flour does that so I was not too disappointed, especially since a smaller slice of whole wheat bread is more substantial than a larger portion of white bread. Secondly, I was pleasantly surprised with the fine texture and softness of the bread. Thirdly, and most exciting, is the fact that there was NO bitterness or bad aftertaste. I realized that the bitterness of most whole wheat breads is what I don’t like! This bread is so mellow yet hearty tasting. I just love it! Even though this flour is more expensive than some grocery stores we are so happy to support a small, local flour mill. I am looking forward to our ritual peanut butter toast for breakfast. Thanks for the wonderful flour!

The Unifine milling method makes this whole wheat flour so much different than the regular stoneground ones at the grocery store. Easy to trade this for some of the white flour yet end up with a similar texture and behavior, and of course it doesn’t hurt that it tastes great, either.

I love your flours, and cereals. I learned about your mill during the pandemic lockdown when I could not purchase good bread, flour or yeast at my local grocery store. Due to the pandemic, many folks were taking up baking. My son was baking Sourdough in Austin, TX. and using a local mill that sold Heritage Grain products near his home. I was inspired and I made one quick google search and found you, a local mill here in Minnesota providing organic Heritage Wheat flours and products. I was delighted to find and support a local mill! I have been baking bread since High School, but never had tried making bread with flour, salt and water only. I made a sourdough starter following online instructions and tips and my sourdough baking adventure began.My starter is 7 months old now 🙂
I started the weekly baking of Sourdough for my family back in the spring. I have used the discard and your flours to make most of our family’s bread, buns, rolls, crackers, and my family has enjoyed the great flavors of home baked breads. I love the fresh flour, great flavor, and knowledge that all of the grain’s goodness is used. Nothing removed, all the nutrients in the flour. Well, started with 5 pound bag, moved up to 10 pounds and just bought 25 pound bags of white and wheat. More economical if you are a bread lover. Also going to try out the pancake mix. I love the heritage blend for plain white bread and light wheat bread. Great in every way. Easier to digest than commercial brand flour, works great with my no knead bread preferences, and freezes quite well, worth every penny. Better than a piece of cake. Be sure to not waste any stale bread and process those to use in place of store crumbs. So much better.
