Hard Red Winter Wheat

Milled in a proprietary Unifine high-velocity impact milling system, producing a super-fine, highly nutritious, 100% whole grain, single source flour. Unlike traditional whole wheat flour, this super-fine grind creates loftier baked goods with greater volume than would be expected from a traditional whole wheat flour.

Use for: bread, rolls, pancakes, muffins, and cookies; and in any recipe calling for whole wheat flour.

Note: Many people find heritage wheat more digestible.

I have been using the same 5-loaf white bread recipe for 25 years. I have always been partial to 100% white bread and my husband is partial to more dense breads such as whole wheat bread. Occasionally, I do vary the ratio of white flour to whole wheat flour and other various flours/grains, such as oatmeal and wild rice (up to 50%) to keep my hubby happy. When I got this bag of heritage (organic! yay!) whole wheat flour I decided to set all caution aside and use only it for the first batch of bread, versus using partial white flour, too. There were several things that I noticed. Firstly, I was not surprised that the loaves collapsed somewhat while baking. They were more rectangular shaped than domed, more rustic looking. Whole wheat flour does that so I was not too disappointed, especially since a smaller slice of whole wheat bread is more substantial than a larger portion of white bread. Secondly, I was pleasantly surprised with the fine texture and softness of the bread. Thirdly, and most exciting, is the fact that there was NO bitterness or bad aftertaste. I realized that the bitterness of most whole wheat breads is what I don’t like! This bread is so mellow yet hearty tasting. I just love it! Even though this flour is more expensive than some grocery stores we are so happy to support a small, local flour mill. I am looking forward to our ritual peanut butter toast for breakfast. Thanks for the wonderful flour!

    I love the slightly sweet nutty flavor of this Whole Wheat flour – I am making multi-gran bread with more and more of this in the mix – it is the BEST I have found for an amazing Whole Wheat flour. I make most of my cookie recipes now with a little of this Whole Wheat Flour to substitute for a little of the white flour- it adds a depth of flavor that is quite lovely.

I followed your step-by-step basic sourdough bread recipe. The sourdough starter is great. It was alive and bubbly on day 4.

    We love each of the flours we’ve purchased, but are having trouble with the sourdough starter. We’re part of the ‘old folks’ generation….in our mid 80’s, never learned the metric system and dealing with grams is a challenge. We wish you might add “cups”, “tablespoons” etc. to your instructions. I understand grams may be more precise, but would it be that far off to add the alternative as well? Our first attempt at making the bread was somewhat less than spectacular. We’ll keep trying, but alternative instructions would be helpful. PS We’ve ordered a new scale (with gram measurements), but don’t know when it will arrive. And listing the alternatives might help others as well.

    Delivery was perfect. The flour arrived safely packaged, and 6 days after I ordered it.
    The flour is excellent. I feel better eating this bread. It is difficult to describe, but I no longer get a saturated feeling of wheat in my system, with this flour. I had been using organic, 100% whole wheat flour from Whole Foods, a good product for the price, but the quality of Sunrise whole wheat flour is far better, for me. I also enjoy the flavor of this bread. I use no salt or oil, so this is a pretty basic bread: water, yeast and flour. Sometimes I even use a little less yeast, because I like a denser loaf. The flavor of this flour carries it off beautifully.

    So far, I’ve produced one loaf of your whole wheat sourdough which has the best crumb I’ve ever produced.

    I couldn’t start a starter with your flour–maybe just not enough yeast in the air here. I tried your flour on two established starters and it didn’t work well. My neighbor tried starting a new starter at her house and with a different flour and it went gangbusters. She gave me some of her starter and it went gangbusters on your flour as well!

    When I was mixing up the batch of bread the color and the smell took me right back to my childhood! My mother made whole wheat bread out of fresh ground flour. We had a small stone grain grinder that you could adjust from fine grind to cracking the grain.

    This is *very different* whole wheat flour. It is fine and fluffy. I am amazed at how it works up easily, and makes light, springy breads but with the depth, color, and complexity of a whole wheat taste. I have used it for pie crusts and the flavor is richer and deeper. I would never use ordinary whole wheat for crust. It makes a focaccia to die for.

    My Swedish Rye bread has a completely different taste when I use all three flours from Sunrise Mill. Whole wheat, Rye and Heritage White are combined to make a light, delicious loaf. It also helps to add molasses, brown sugar, fennel, anise and caraway. Mustn’t forget the salt!

    I have been gluten intolerant for at least three years. I used your Heritage Whole Wheat Flour and Heritage Bread Flour to bake my favorite Honey Whole Wheat yeast rolls. They are fantastic!     I was first attracted to this product because of its heritage grain, and it addressing a gluten sensitivity w/o having a gluten allergy. Plus, I also had jumped on the band wagon with making bread during pandemic era. This whole wheat flour is significantly better. My breads now or lighter, less dense, and wonderfully delicious! And as far as the gluten thing, I’ve had no reactions. I spend the extra money gladly.

    Well, started with 5 pound bag, moved up to 10 pounds and just bought 25 pound bags of white and wheat. More economical if you are a bread lover. Also going to try out the pancake mix. I love the heritage blend for plain white bread and light wheat bread. Great in every way. Easier to digest than commercial brand flour, works great with my no knead bread preferences, and freezes quite well, worth every penny. Better than a piece of cake. Be sure to not waste any stale bread and process those to use in place of store crumbs. So much better.

    I love your flours, and cereals. I learned about your mill during the pandemic lockdown when I could not purchase good bread, flour or yeast at my local grocery store. Due to the pandemic, many folks were taking up baking. My son was baking Sourdough in Austin, TX. and using a local mill that sold Heritage Grain products near his home. I was inspired and I made one quick google search and found you, a local mill here in Minnesota providing organic Heritage Wheat flours and products. I was delighted to find and support a local mill! I have been baking bread since High School, but never had tried making bread with flour, salt and water only. I made a sourdough starter following online instructions and tips and my sourdough baking adventure began.My starter is 7 months old now 🙂

    I started the weekly baking of Sourdough for my family back in the spring. I have used the discard and your flours to make most of our family’s bread, buns, rolls, crackers, and my family has enjoyed the great flavors of home baked breads. I love the fresh flour, great flavor, and knowledge that all of the grain’s goodness is used. Nothing removed, all the nutrients in the flour. Since summer, every slice of bread, pizza crust, cake, pie crust, and cookie has been made with some or all of your flours.

    Your customer services have not been needed because shopping online with your website is quick and it is easy to find the products needed. I was worried about shipping but should not have been. Your sturdy packaging protects flour when packages are bumped/ dropped en route, no leaks!

    Sunrise Heritage Whole Wheat Flour and White Flour remind me of eating my favorite mom-baked goods when I was young! The flavor is back, and my digestive problems with wheat products is gone. I have only made my homemade pancakes, but they are a staple with me. I will try sourdough bread next!

    The Unifine milling method makes this whole wheat flour so much different than the regular stoneground ones at the grocery store. Easy to trade this for some of the white flour yet end up with a similar texture and behavior, and of course it doesn’t hurt that it tastes great, either.

    I have been using the same 5-loaf white bread recipe for 25 years. I have always been partial to 100% white bread and my husband is partial to more dense breads such as whole wheat bread. Occasionally, I do vary the ratio of white flour to whole wheat flour and other various flours/grains, such as oatmeal and wild rice (up to 50%) to keep my hubby happy. When I got this bag of heritage (organic! yay!) whole wheat flour I decided to set all caution aside and use only it for the first batch of bread, versus using partial white flour, too. There were several things that I noticed. Firstly, I was not surprised that the loaves collapsed somewhat while baking. They were more rectangular shaped than domed, more rustic looking. Whole wheat flour does that so I was not too disappointed, especially since a smaller slice of whole wheat bread is more substantial than a larger portion of white bread. Secondly, I was pleasantly surprised with the fine texture and softness of the bread. Thirdly, and most exciting, is the fact that there was NO bitterness or bad aftertaste. I realized that the bitterness of most whole wheat breads is what I don’t like! This bread is so mellow yet hearty tasting. I just love it! Even though this flour is more expensive than some grocery stores we are so happy to support a small, local flour mill. I am looking forward to our ritual peanut butter toast for breakfast. Thanks for the wonderful flour!

    I LOVE this flour! The lower gluten makes the breads a little crumblier. But, I tweeked my recipes by adding a little more liquid starter and that seemed to make a difference. The flavor is hearty and something I really like. Bread is sometimes a blank canvas with little taste of its own, not so with this flour. It’s a little rich for my pocketbook, but I’d cook with it every day if I could afford to.

    The taste is milder than your typical grocery store hard red wheat, but has no lack of the wheaty fragrance you’d be expect. The flour is very light and easy to mix with water (thanks, Unifine process). The dough is also pleasantly elastic. As far as loft in the crumb, I wouldn’t say I noticed dramatically more rise than other whole wheat flours in my pantry, but it rose well enough, and this may improve as I tweak my recipes.

    The first thing I did is make my typical lazy, high-hydration, no-knead loaf, and it got eaten up promptly. I’d call this a success.

    Last but not least, the bag I got was ridiculously fresh — milled about a week before arrival.

    The grinding process for the whole wheat flour is wonderful, leaving every baked item lighter than you imagine…..using Whole Wheat Flour! The larger (half eaten) loaf is made with the whole wheat flour; again, beer bread (a quick bread). You can see the crumb…..no sodden inner loaf here!!

    Tried the hamburger bun recipe with this flour yesterday. They are better than the Brioche buns at Lunds. Sent the recipe to all my family bakers. I credit the fine grain whole wheat for my success.

    I only give this a 4 simply because I haven’t used it yet! It looks good but I can’t give it 5 until I’ve actually tasted it. All of my previous purchases have been exceptional which is why I am confident this flour will live up to at least a 4!

    I made Indian style bread called chapathi. They were sooo soft and fluffy! I am going to stick with this flour in future because it yields both healthy and tasty results. The shipping was very prompt. I am very glad to find Sunrise Mills. Looking forward to more baking.
