LOVE this flour! Started ordering baking supplies online during the pandemic when you couldn’t get what you needed off the shelves in the store. Needed a special cereal for low-glycemic index bread and just picked Sunrise out of the blue because what they advertised sounded really good. I have been ordering specialty flours from them ever since. The quality of the flours/cereals/mixes is outstanding, they’re all done the old-fashioned way and the customer service is the best. I love this flour in general, but after trying the pie crust recipe posted on the site, I’m head over heels in love.
I made my regular crust (recipe is almost identical) for half my pies using the the Sunrise AP flour, and the Whole Wheat Pastry + Sunrise recipe for the other half.
Consensus (even my pickiest child) was that the whole wheat pies were better. I used the crusts in both blind bake with pumpkin and double crust apple. Flawless!!
BTW, this is not to say that the Heritage White doesn’t make a killer crust, because it absolutely makes beautiful, flaky crusts as well. -

After reading many comments that said Sunrise flour could be eaten by people with gluten intolerance I purchased this flour to bake some bread for a family member who cannot eat gluten. Absolutely love it. So the non baker made Organic Oatmeal Cookies …. Using the oatmeal/pb/cchip recipe, changed it up for lower glycemic and sodium levels. I experimented with the baking times and scoop sizes. 10-15 min and even a touch longer for some larger thin crunchy ones.

This year I had to make bread for a special occasion. Last year when I used organic whole wheat flour, I could not eat it after the event because of digestion issues so I threw it out. But using this flour this year allowed me to eat the bread after the event. The bread is an unleavened bread made only with water, flour and a little oil to grease the pan. It was perfect for the celebration and was delicious afterward.

I make fresh tortillas twice a day. This flour give the same smell and taste what Grandmother’s tortillas did. It doesn’t feel heavy after I eat these tortillas as opposed to any other whole grain or whole wheat flour, I think because of less gluten content. I baked a couple of loaves of multigrain bread using this whole wheat flour. They were perfect! Soft but not overly soft. Firm but not dense. Knowing that your flour is organic, and thinking that your milling procedures meet the highest standards, uplifts my spirits when I bake bread and prepare food requiring wheat, rye, oat or corn because it makes me happy to eat and serve healthy meals.
Is my assumption correct that your products are vegan? -
This flour makes fabulous sourdough biscuits. They baked up with a very nice crumb, the perfect biscuit texture, with a nice light flavor. I have a gluten sensitivity and haven’t been able to eat a good biscuit in years. I have absolutely no digestive issues using this flour. It’s so nice to be able to eat baked goods again.

I really like this flour, but I would say that “pastry” is a limiting way to market it. Whole Sonora turned out perfectly good for making daily bread (I lean towards high-hydration no-knead out of laziness). It was a household favorite, and people described the flavor as a “reminiscent of a french baguette”. Not bad for a whole wheat flour! Of course, you won’t get __quite__ as airy a crumb, but it’ll sit way better in your stomach.
From this bread genre, I’ve used King Arthur White Whole Wheat, as well as a few Khorasan flours. The Sunrise flour knocks the socks off King Arthur’s take, to my palate. I like both Khorasan and Sonora, but they’re a bit like apples and oranges, good for different times. I’ll enjoy having both in my pantry.
Speaking of Khorasan, I wonder if Sunrise would source and mill some? My entire order came fresh-milled, and shipped fast, whereas sourcing Khorasan flour otherwise can be a bit of an adventure.

It is such a joy to be able to bake with real flour again for my husband who is on a strict non-GMO diet. He loves baked goods and there is nothing better than this flour. I didn’t know flour had variation of flavors until I tried White Sonora Pastry Flour. I have switched to using this for my muffins, pie crusts and cookies. The crazy thing is I can hardly tell that it is a whole wheat flour! The bran is almost imperceptible, non of the scratchy mouthfeel or dense-ness.

LOVE this flour! Started ordering baking supplies online during the pandemic when you couldn’t get what you needed off the shelves in the store. Needed a special cereal for low-glycemic index bread and just picked Sunrise out of the blue because what they advertised sounded really good. I have been ordering specialty flours from them ever since. The quality of the flours/cereals/mixes is outstanding, they’re all done the old-fashioned way and the customer service is the best. If minimal additives and natural process and product are your thang, these are the people to contact. Ten stars on a five-star rating scale, if I could.
