Heritage White Flour (2.5 lb. bag): This white flour is milled from organic Turkey Red Heritage Wheat Berries, is a fine, naturally dazzling white all-purpose flour. The color comes from the natural white color of the wheat's endosperm, not from bleaching. Because this is a heritage wheat, it contains a type of gluten that many people with gluten intolerance find to be more digestible. You won’t believe how silky soft and smooth this all-purpose flour is and how easy it is to bake with. It works exceptionally well for everything – bread, pastries, cookies, cakes, pie crust, pasta, pizza crust – a truly all purpose flour.
Heritage Bread Blend (2.5 lb. bag): This bread flour is a unique blend of two heritage wheat flours - Turkey Red and White Sonora. Turkey Red is a strong, hard winter wheat that's rich in protein and has excellent baking qualities. It has a pure white endosperm that will dazzle you. No need for bleaching this flour. White Sonora is a soft wheat with a rich, nutty flavor and creamy-gold color. Together they make a loaf of bread you’ll be proud of whether it’s sourdough or made with yeast. We think it’s the best flour for bread!
Heritage Pizza Flour (2.5 lb. bag): Our heritage Pizza Flour is a blend of Heritage White Flour and Ultra-Fine Whole Wheat Flour. It was developed as a nutritious alternative to traditional Italian 00 flour. This exceptional flour makes a stretchy, chewy pizza crust and has been used by professional pizza makers and home cooks alike. It can also be used for bread baking and in recipes in which you want to have a slight whole wheat twist. The flavor is so great that pizzas need fewer toppings. In our opinion, it makes the best pizza crust!
Ultra-Fine Heritage Whole Wheat Flour (2.5 lb. bag): Our Heritage Whole Wheat Flour is milled from organic heritage Turkey Red wheat. It is milled in a proprietary Unifine high-velocity impact milling system, rather than a stone mill. This produces a super-fine, highly nutritious, 100% whole grain flour. Our Unifine mill produces the finest whole wheat flour on the market. The bran pieces are smaller than those in conventional whole wheat flour. This super-fine grind creates loftier baked goods with greater volume than would be expected from a traditional whole wheat flour. Adding some Whole Wheat flour to bread and other baked goods will have people wondering why they have so much flavor. Use for: bread, rolls, pancakes, muffins, and cookies; and in any recipe calling for whole wheat flour.
Ultra-Fine Heritage Whole Wheat Pastry Flour (2.5 lb. bag): White Sonora: A Soft White Spring Wheat Our White Sonora flour is a soft white spring wheat. It is milled in a proprietary Unifine high-velocity impact milling system, producing a super-fine, highly nutritious, 100% whole grain, single-source pastry flour. It has a lower protein percentage so it isn’t used for bread baking but makes other non-yeasted baked goods. Use our pastry flour in whole wheat muffins, cookies, pancakes, brownies, tortillas, biscuits, pies for added nutrition and flavor.
7-Grain Heritage Pancake Mix (2.5 lb. bag): Our 7-Grain Heritage Pancake Mix is a customer favorite. This pancake mix makes healthy pancakes that are surprisingly light, yet filling with a blend of 7 organic whole grains. There are many health benefits to these organic whole grains. They are packed with nutrients, are an excellent source of fiber, and may reduce risk of heart disease. It makes light waffles, too. These banneton proofing baskets will give your dough the structure it needs to maintain its shape while proofing and getting it ready to bake. What is Heritage wheat?
Heritage wheat was the predominant wheat grown in America up until the 1950’s. Many people find it more digestible than modern wheat. Its long deep root system allowed it to survive the Dust Bowl, and gave the Midwest its famous nickname “The Bread Basket”. Heritage wheat was a staple in every household. The history of it can be tracked to biblical times and has been responsible for nourishing generations. It was grown before the introduction of intensive scientific plant breeding.This wheat is experiencing a resurgence.
