Big + Baked Chicken and Waffles
Crumb Crew member Aaron Ehalt is a professional tool salesman who “turns live fire cooking into visual art.” He celebrates sustainability and enjoys barbecuing with clean, quality, nutritional ingredients, including heritage wheat flour from Sunrise Flour Mill. It comes as no surprise that he loves our new Big + Baked Waffle Mix and uses it for his homemade chicken and waffles:
Ingredients

2 chicken breasts

1 cup Sunrise Flour Mill Heritage White Flour

1 cup Big + Baked Waffle Mix

1 cup milk

½ cup chicken seasoning

3 large eggs
-
2 tbsp melted butter
-
1-2 tsp vanilla extract
-
Maple syrup
-
Oil, beef tallow, or fat for frying
Directions
Mix the flour and seasoning in one container.
Crack two eggs into a second container.
Pound chicken flat with a mallet, then place into the dry mix, then egg, then back into the dry mix.
Deep fry until the chicken has an internal temperature of 165 degrees Fahrenheit.
While the chicken cooks, combine the waffle mix and milk in a large bowl, and whisk together.
Mix in the egg, butter, and vanilla extract.
Let the waffle mixture rest for five minutes while the waffle iron heats according to machine instructions.
Pour the mix into waffle iron and cook according to machine instructions.
