Chocolate Mint Cookie Recipe

There is something about the way the chocolate and mint flavors blend that makes this a unique and tasty treat. There is a little Greek yogurt in this recipe which makes the cookie ridiculously soft and moist. And, compared to other cookie recipes, there is less sugar. It's a true trifecta!
Ingredients

1 Cup (2 sticks) butter, softened

½ Cup sugar

½ Cup, brown sugar, packed

1 Cup cocoa powder, unsweetened

2 eggs

1/2 Cup plain Greek yogurt

2 tsp vanilla extract

2 Cups SFM Heritage Pastry Flour, sifted

1 tsp baking soda
-
¾ tsp salt

1 Cup mint chips, or 1 Cup chopped dark chocolate mint bar
Directions
Heat oven to 350F
In a large mixing bowl cream butter and sugars until light and fluffy.
Mix in cocoa powder until all of it is incorporated.
Beat in eggs.
Add yogurt and vanilla and mix well.
Beat in flour, baking soda and salt, until mixture is smooth.
Mix in mint chips
Drop by cookie scoop or level tablespoons on a prepared baking sheet.
Bake for 10 minutes.
Remove from oven and let finish baking for 5 minutes on the cookie sheet before moving them to a cooling rack.
While these are delicious the first day, we think they are even better on day two! Something about letting them cool completely and giving the ingredients extra time to complement each other makes a delicious difference.
