Heritage Lemon Oat Bars
Ohh these lemon oat bars are dangerous... before you know it you have had three and can’t stop! The zip of the lemon pairs nicely with the chew of the oats and the crunch of the nuts. Perfect for your summer picnics or to enjoy on your own… and if you're anything like us, you will do both :)
1 1/3 C up Sunrise Flour Mill Flour (any kind)
2/3 Cup sugar
3/4 Cup Butter
1 Cup Sunrise Flour Mill Oat Cereal
1/2 Cup Chopped nuts
1 (8 oz.) package cream cheese softened
3 Tbsp Lemon juice
1 Tbsp Grated lemon peel
Heat oven to 350 F and grease a 13x9 baking dish.
In a medium bowl, whisk together flour, sifted, and cane sugar.
Cut in butter until you are left with a coarse crumbly mixture.
Mix in oats and nuts. Measure out one cup of the crumble and set aside for later.
Press the remaining crumble mixture into the bottom of the greased baking dish.
Bake for 15 minutes.
While the crust is baking. Beat together cream cheese, egg, lemon juice and lemon peel until well combined.
Pour this mixture over the crust. Sprinkle the reserved crumble. Bake for 25 minutes.
Ok what do you do with the one cup of crumble that you set aside for later?
