Peanut Butter Butterscotch Chip Cookies
1 cup butter
1 cup white sugar
1 cup brown sugar, not packed
2 tsp vanilla
1 Cup peanut butter, either smooth or crunchy
2 ½ Cups Sunrise Flour Mill Whole Wheat Pastry Flour
2 tsp baking soda
½ tsp salt
I cup butterscotch chips.
Heat oven to 350F, and grease or line a baking sheet with parchment paper
In a large bowl, cream together butter and the sugars until fluffy
Mix in eggs and vanilla
Add peanut butter and mix well
Beat in flour, baking soda and salt
Add butterscotch chips and mix until incorporated
Drop by spoonful or use a cookie scoop to drop them on the baking sheet. I use a large baking sheet and get 20 to one sheet.
Bake for 8 minutes or until the bottom edge just slightly browns. Leave on baking sheet for at least two minutes to finish baking.
Transfer to a cooling rack. Enjoy!
