The Best Cold Pasta Salad

Ingredients

One Box Heritage Shells Pasta

2 Cups halved cherry tomatoes

1 15oz can of chickpeas, drained and rinsed

1 cup cucumbers, sliced and quartered

½ small red onion, minced

1 cup crumbled feta cheese

1/2 packed cup fresh parsley, finely chopped
-
1/2 loosely-packed cup fresh mint leaves, finely chopped

¼ cup roasted and salted pistachios
-
salt and pepper, to taste

1/3 cup olive oil + extra for drizzling
-
¼ cup fresh lemon juice
-
1 teaspoon Dijon mustard

3 garlic cloves, minced
-
1 teaspoon Italian seasoning
-
½ tsp salt
Dressing
Directions
Prepare the Heritage Shells pasta according to the package directions, until slightly al dente.
While you wait for the pasta, you can prepare the dressing. In a small bowl, whisk together the olive oil, lemon juice, mustard, garlic, Italian seasoning, and salt.
Drain the pasta and toss it with a little olive oil. This will help it not stick together.
Allow the pasta to cool to room temp.
In a large bowl, combine tomatoes, chickpeas, cucumbers, onion, feta cheese, parsley, mint, and pistachios.
Add pasta to the large bowl.
Add the dressing to the bowl and mix it all until evenly coated. Season to taste with more lemon, salt and pepper. Enjoy!
