Cookies and Bars
1 Cup butter (2 sticks)
1 Cup brown sugar
1 Cup white sugar
1 1/2 Cup Sunrise Flour Mill Organic Heritage Whole Wheat Pastry Flour (or any other SFM flour you have on hand).
1 tsp baking soda
1 tsp salt
2 tsp vanilla
3 Cup Sunrise Flour Mill Organic Oat Cereal
1 Cup chocolate chips
1/2 Cup nuts (optional)
1/2 C Sourdough Starter (optional)
Preheat oven to 350F
Cream butter and sugars until light and creamy.
Add eggs and vanilla and mix well.
In a separate bowl mix together flour, soda, and salt.
Add dry ingredients gradually to wet ingredients and mix until well combined.
If baking immediately, stir in Oat Cereal, chocolate chips and nuts, if using.
Drop by teaspoonful or small cookie scoop onto a greased or parchment-lined cookie sheet and bake for 8-10. It's better to take them out a little underbaked and let them cool on the baking sheet for 5-10 minutes and then remove to a cooling rack.
If using sourdough discard, mix all ingredients but Oat Cereal. Add starter and refrigerate 7 hours or overnight. When ready to bake, add the Oat Cereal, and follow baking directions
