2 cups 7-Grain Heritage Pancake Mix

1 cup sourdough starter discard

2 cups buttermilk

2 tablespoons sugar

The overnight preferment (made 12 hours before)

3/4 teaspoon salt

2 eggs

1 teaspoon baking soda

1/4 cup coconut oil or 4 tablespoons melted butter

The Batter
Directions
Although this is a super easy recipe, you want to start it the night before you make them.
The night before your big breakfast, make the overnight preferment.
Remove one cup (or about 225 grams) of starter.
In a large bowl, mix the one cup of starter together with two cups of 7-Grain Heritage Pancake Mix two tablespoons of sugar, and two cups of buttermilk.
Cover the mixture and leave it in the fridge overnight (or about 12 hours)
In another bowl, beat two eggs together with 1/4 cup of coconut oil or four tablespoons of butter.
Mix in the overnight preferment.
Stir in the salt and baking soda. The batter will start to bubble, which means everything is going according to plan…:)
Heat and grease your waffle iron (no greasing necessary if you have a non-stick waffle iron) and pour the mixture into it. Bake until the waffles smell and look good enough to eat.
