Ingredients

1 cup Sunrise Flour 7-Grain Heritage Pancake Mix

1 cup milk

1 egg

2 Tbsp butter, melted

Butter or oil for greasing the pan

Optional: Any toppings (syrup, powdered sugar, walnuts, etc.)
Directions
Using a whisk, mix 7-Grain Heritage Pancake Mix and milk in a large bowl.
Slowly mix in butter and egg. Allow to rest for 10 minutes.
Preheat your ironed griddle or cast-iron skillet to medium heat.
Grease/batter the pan, and then immediately prepare to pour the batter into the pan.
Pour the batter into the pan, and be careful not to pour too much in. Only pour in what you can comfortably scramble and move around in the pan. Depending on the size of the pan, this will likely be .5 of a cup or a full cup.
Let the batter sit on the hot pan for about thirty seconds.
After thirty seconds, scramble the pancake batter like you would scramble eggs. Try folding batter over onto itself, pushing it around, or even tossing it lightly into the air. We recommend scrambling larger chunks of pancakes, so that they don’t burn quickly and have more flavor.
Once the pancake bits reach a golden-brown, then they’re ready to be taken out. Quickly move them from out of the pan and onto a plate.
Add any desired toppings, such as a sprinkling of powdered sugar, strawberry jam, syrup, whipped cream, etc.
