Chocolate Bundt Cake

Ingredients

2 Cups Sunrise Flour MIll Whole Wheat Pastry Flour (any SFM flour will work), sifted

¾ Cup unsweetened cocoa powder, stirred to break up any lumps

2 tsp baking soda

1 tsp baking powder

1 Cup whole milk

1 Cup strong brewed coffee

2 tsp vanilla extract
-
2 Cups sugar

½ Cup coconut oil
-
2 eggs
Directions
Heat oven to 350
Prepare Bundt pan by greasing it well. Get into all the nooks and crannies
In a mixer or by hand in a large bowl, mix together sugar, coconut oil, and eggs until smooth.
In a separate bowl, add flour, cocoa powder, baking soda and baking powder. Mix until they are incorporated.
Add the dry ingredients to the wet ingredients and mix until just combined.
In a medium bowl, mix together milk, coffee, and vanilla.
Add coffee mixture to the large bowl starting on low speed, if using a mixer, and slowly work up to medium speed.
Batter will be very runny.
Pour into a well-greased bundt pan
Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
Optional: Frost with your favorite frosting and top with powdered sugar
