1 Cup Oat Cereal

1 Cup Heritage Whole Wheat Pastry Flour, sifted

½ Cup white sugar

½ Cup brown sugar, lightly packed

1 Cup unsweetened coconut, finely chopped

5 Tbsp butter
-
1 Tbsp honey
-
2 Tbsp Maple Syrup

1 tsp baking soda
-
2 Tbsp boiling water
Directions
Heat oven to 350 F
In a large bowl, mix all dry ingredients together (oats, flour, sugar, brown sugar, and coconut). Our Danish Dough Whisk works really well
Melt butter, syrup and honey in a medium saucepan.
Add baking soda and hot water - and watch the bubbles form!
Add butter mixture to the dry ingredients, mixing until they all are incorporated
Using a cookie scoop, scoop onto a prepared baking sheet. Press down slightly. Leave an inch or so between them. They will spread a little.
Bake for 10-12.minutes, or until the edges are crispy.
Let cool for 5 minutes on the baking sheet and remove to a cooling rack
