White Chocolate Dried Cranberry Oatmeal Cookie Recipe

Ingredients

½ Cup butter, softened

¼ Cup light brown sugar

¼ Cup granulated sugar

1 egg

1 tsp vanilla extract

1 Cup Heritage Whole Wheat Pastry Flour

½ tsp baking soda

½ tsp ground cinnamon

¼ tsp salt

1 Cup Oat Cereal
-
¾ Cup dried cranberries
-
¾ Cup white chocolate chips
Directions
Heat oven to 350F
Cream together butter, brown sugar, and sugar in a mixing bowl.
Add egg and vanilla and mix well.
In a separate bowl, combine flour, baking soda, cinnamon, and salt.
Slowly mix the flour mixture with the sugar mixture.
Add Oat Cereal, dried cranberries, and white chocolate chips and mix until incorporated.
On a parchment lined baking sheet, drop by cookie scoop or tablespoon
Bake for 8-10 minutes or until the edges are just starting to brown. It’s better to underbake just a little and leave on the baking sheet five minutes to finish baking.
