White Sonora: A Soft White Winter Wheat

Milled in a proprietary Unifine high-velocity impact milling system, producing a super-fine, highly nutritious, 100% whole grain, single-source pastry flour. Unlike traditional whole wheat flour, this super-fine grind creates loftier baked goods with greater volume than would be expected from a traditional whole wheat flour.

Use for: muffins, cookies, pancakes, brownies, tortillas, biscuits, pies, and more. Using as a 20-30% replacement in a bread recipe adds a great burst of flavor.

This year I had to make bread for a special occasion. Last year when I used organic whole wheat flour, I could not eat it after the event because of digestion issues so I threw it out. But using this flour this year allowed me to eat the bread after the event. The bread is an unleavened bread made only with water, flour and a little oil to grease the pan. It was perfect for the celebration and was delicious afterward.

My family really enjoyed eating bread again as we have cut out all commercially made bread products during to wheat contamination. This flour is amazing to work with and tastes great as well.

This was a nice surprise. There are 7g of fiber in this flour, but I didn't really notice it in the pie dough that I made. The final baked product was nicely crisp, without the bitterness, often found in whole-grain products.

It is such a joy to be able to bake with real flour again for my husband who is on a strict non-GMO diet. He loves baked goods and there is nothing better than this flour. He has had absolutely no ill effects from this and he has eaten a lot! So far cookies and cinnamon rolls! We couldn’t be more pleased!!!

    Absolutely love it. So the non baker made Organic Oatmeal Cookies …. Using the oatmeal/pb/cchip recipe, changed it up for lower glycemic and sodium levels. I experimented with the baking times and scoop sizes. 10-15 min and even a touch longer for some larger thin crunchy ones.

    My dough seemed noticeably more pliable, my baked goods have even better flavor. I’ve experimented with blending with other flours and it just doesn’t disappoint. Most importantly, I am gluten intolerant and I have ZERO reactions from using this flour. It’s better than being able to eat breads and baked good again because the quality of the flour is so fantastic, it makes everything I bake better!

    I make fresh tortillas twice a day. This flour give the same smell and taste what Grandmother’s tortillas did. It doesn’t feel heavy after I eat these tortillas as opposed to any other whole grain or whole wheat flour, I think because of less gluten content. Since I use lot of flour , it is on the expensive side nevertheless very good.

    Great product. My pie crust texture is so much better than with gluten free flour, and no GI distress. I don’t have true celiac disease, but wheat flour causes me GI distress. Not these products. If you are merely gluten sensitive, it is definitely worth a trial.

    Sunrise White Wheat Berries can be used to make a pastry flour. But for certain fine pastry products Sunrise Pastry flour is a better choice. You could grind your own, but it’s difficult to get an exceptionally fine grind without a very expensive grain mill. Simpler and less expensive to buy the flour.

    Love your flours. The whole wheat pastry is my go to for many recipes. Can’t imagine my buttermilk hot cakes without it. As mentioned in your ads, have had family with gluten sensitivity enjoy my baked goods made with your flours with no adverse reactions. I’m a customer for life. Have your flour, whole wheat flour, pastry whole wheat flour, and pizza flour. Have yet to try the pizza flour, but I’m sure I will enjoy it like the rest of them.     I love this flour! It has a great consistency…normal! Even though I’m gluten sensitive, it didn’t bother my stomach. I made Oatmeal Chocolate Chip cookies for my husband. He loved them. Our daughter, who stays away from gluten as well, said that it didn’t bother her stomach. We’re happy campers. Will keep this as a staple in the house. Also will be ordering the pancake and waffle mix!

    I really like this flour, but I would say that “pastry” is a limiting way to market it. Whole Sonora turned out perfectly good for making daily bread (I lean towards high-hydration no-knead out of laziness). It was a household favorite, and people described the flavor as a “reminiscent of a french baguette”. Not bad for a whole wheat flour! Of course, you won’t get __quite__ as airy a crumb, but it’ll sit way better in your stomach.

    From this bread genre, I’ve used King Arthur White Whole Wheat, as well as a few Khorasan flours. The Sunrise flour knocks the socks off King Arthur’s take, to my palate. I like both Khorasan and Sonora, but they’re a bit like apples and oranges, good for different times. I’ll enjoy having both in my pantry.

    Speaking of Khorasan, I wonder if Sunrise would source and mill some? My entire order came fresh-milled, and shipped fast, whereas sourcing Khorasan flour otherwise can be a bit of an adventure.

    I didn’t know flour had variation of flavors until I tried White Sonora Pastry Flour. I have switched to using this for my muffins, pie crusts and cookies. The crazy thing is I can hardly tell that it is a whole wheat flour! The bran is almost imperceptible, non of the scratchy mouthfeel or dense-ness.
